This is an easy and flavoursome pea soup recipe. Pretty cheap and versatile too. Make ahead of time or eat it fresh. Or ditch the chorizo and chicken stock and make yourself a veggie version. Maybe with mint or basil instead of the coriander? Just give it a whirl and experiment
- 1 tbsp olive oil
- 1 medium potato, peeled and diced
- 1 chopped onion
- knob of butter
- 60g slized chorizo cut into strips
- 750ml chicken stock (reduced salt if you can)
- 400g frozen peas
- small bunch of coriander roughly chopped
Heat the oil in a pan, throw in the chorizo strips and fry till crispy. Remove them from the pan and put to one side.
Melt the butter in the same pan, add the onion and then soften. Tip in the potato and cook for a minute before adding the stock. Cook the potato till it’s soft.
Leave a handful of peas to one side for now and then chuck the rest of the peas in with the stock. Simmer for a couple of minutes. Then add the coriander and let it wilt.
Remove from the heat and blend until smooth. Put the soup back on the heat. Add the reserved peas and heat through.
Put your soup in nice warm bowls top with the chorizo strip and serve with some crusty bread.
